How does that happen? It can't be fair. Or right. Sheez.
Here's the weekend project:
When I bought my house 6 years ago, it was painted this gray color which actually has a lot of blue in it too, just not so much in this picture. I had vinyl siding installed on the house and it is a very pale, pale, green. SO 6 years later, the back door still looked like this. Something finally clicked in me and I couldn't stand it anymore. I've never painted before so this was a bit of an adventure for me. I got one coat on Friday night and then Saturday morning finished up with the second. No picture of the final product sans tape but even with the tape you can see what a big improvement this was. So little time, effort and money; what took me so long!?!
I can't describe the pride. DIY here I come!!;-) Well, maybe not...
I did feel like I was on a roll however. I also spun for more than 10 minutes Friday night, Saturday and yeseterday too. If I keep this up I'll have to break down and give that plying thing a try. Maybe.
Yesterday was pretty slow as I felt like hell, was in pain and thought I would faint a couple of times. Don't know what that was all about but I have a call in to the doc and hope to see him this week.
I had 2 crockpots going in an effort to back away from the fast food. I did very well last week, bringing my lunch every day and eating at home each evening. The one exception was Friday when I had lunch with 3 co-workers but we did eat relatively healthy. I have been thinking about stuffed cabbage for months but it's so much trouble, oy. I found a recipe for mock stuffed cabbage and that was all the inspiration I needed. I browned the beef, shredded a head of cabbage, added the other ingredients and in four hours, I had stuffed cabbage. YUMMY.
The only problem is I should have used the larger pot for this recipe. I ended up putting it on high for an hour so the cabbage would cook down more quickly and I could put in the rest of it. This recipe is healthy, inexpensive and very tasty. I'll be making more of this one for sure. I also made Thai Chicken in another slow cooker but for some reason didn't get a picture. It took a little longer to cook but just like the first one, the prep was very easy and fast. And delicious! Crock pots are the unsung heros of summer for sure!
So here we are, Monday morning. My boss is on vacation so it should be quiet, just the way I like it. I do have tons of year-end business to get finished before he returns so I'd better stay focused. Right.
